Take a trip back in time to 19th century Paris at Surry Hills’ most unusual new small bar. Absinthe Salon is not the sort of bar Sydney is used to.
Here you drink absinthe, and absinthe only. And you can only have a maximum of three pourings. Choose your poison – there are 18 different absinthes on offer, from Switzerland, France, Germany and Spain. Each absinthe has its own flavour profile so unless you know a lot about absinthe or drink it regularly, it’s a swell idea to get a bit of assistance.
